What You Need — Ingredients for Two
- 2 bone-in, skin-on chicken thighs
- 1 lemon, sliced
- 4 garlic cloves, lightly crushed
- 2 sprigs fresh rosemary
- A handful of cherry tomatoes

The Method — Step by Step
Step 1: Prep — 5 minutes
Pull the chicken out of the fridge 20 minutes before you start. Preheat your oven to 200°C. Pat the chicken dry with paper towels — this is the step most people skip, and it’s the reason most chicken skin doesn’t crisp properly. Season generously on both sides with salt and pepper.
Step 2: Sear — 5 minutes
Heat your cast iron skillet over medium-high until it’s properly hot — a drop of water should evaporate immediately. Add a drizzle of olive oil. Place the chicken skin-side down and do not touch it. Set a timer for 5 minutes. Walk away. The skin needs contact and heat to render properly, and every time you move it, you lose progress.
Step 3: Build the Pan — 2 minutes
Flip the chicken. Add the garlic cloves, cherry tomatoes, lemon slices, and rosemary directly into the pan around the chicken. The tomatoes will burst in the oven and become part of the sauce. The lemon will caramelize. The garlic will soften into something sweet and spreadable.
Step 4: Oven — 25 minutes
Transfer the skillet to the oven. Set a timer. Walk out of the kitchen.
This is the slow part — and it’s intentional. You have 25 minutes. Use them.
Step 5: Rest & Serve — 3 minutes
When the timer goes off, the skin should be deep golden and the tomatoes collapsed. Let it rest in the pan for 3 minutes — this keeps the juices inside the chicken where they belong. Then bring the skillet straight to the table.
The Table — While It’s in the Oven
Those 25 oven minutes are the whole point of this recipe. Pour the wine. Set two plates. Light a candle. Put on something quiet.

Plating — Serve from the Pan
