One Ingredient, Three Ways: Eggs — Scrambled, Poached & Fried for a Beautiful Breakfast Table | PLAIN TABLE

The most humble ingredient. The most satisfying morning.

Why Eggs?

There's a reason eggs appear on every great breakfast menu in the world. They're fast, they're forgiving, and when cooked with a little care, they're extraordinary. This is the first installment of our One Ingredient, Three Ways series — where we take a single ingredient and show you how to cook it three different ways, plate it beautifully, and make your table feel like somewhere worth sitting.

Today: eggs.

What You'll Need

The Pan
The right pan makes all the difference. A quality nonstick surface means your eggs release cleanly, cook evenly, and slide onto the plate looking exactly as they should.

The Plate

Method 1: Scrambled Eggs

The goal: Soft, creamy, barely set — not dry, not rubbery.

Ingredients (1 serving):

  • 3 eggs
  • 1 tbsp butter
  • 1 tbsp crème fraîche or heavy cream
  • Salt and white pepper

Steps:

  1. Crack eggs into a cold nonstick pan. Add butter. Do not whisk yet.
  2. Turn heat to low. Begin stirring slowly with a spatula as the butter melts.
  3. Keep stirring continuously, moving the eggs around the pan. Remove from heat every 20 seconds to control the temperature.
  4. When eggs are just barely set and still look slightly underdone, remove from heat. Stir in crème fraîche.
  5. Season and plate immediately.

Plating: Spoon into the center of a wide ceramic bowl. Add a crack of black pepper and a small pinch of chives. Leave the edges of the bowl clean.

Method 2: Poached Egg

The goal: A tight, compact white with a completely liquid yolk.

Ingredients (1 serving):

  • 1–2 very fresh eggs
  • 1 tsp white vinegar
  • Water, salt

Steps:

  1. Fill a small saucepan with 3 inches of water. Add vinegar. Bring to a gentle simmer — not a rolling boil.
  2. Crack egg into a small cup or ramekin first.
  3. Stir the water in a circular motion to create a gentle whirlpool. Slide the egg into the center.
  4. Cook for exactly 3 minutes for a runny yolk. Remove with a slotted spoon.
  5. Rest on a paper towel for 10 seconds to remove excess water.

Plating: Place in a deep white ceramic bowl. Add a spoonful of hollandaise or just a drizzle of good olive oil. Finish with fresh chives and flaky salt.

Method 3: Fried Egg

The goal: Crispy, lacy edges. Yolk still runny. Done in 2 minutes.

Ingredients (1 serving):

  • 1–2 eggs
  • 1 tbsp butter (for sunny-side up) or neutral oil (for crispy edges)
  • Flaky salt, black pepper

Steps:

  1. Heat your nonstick pan over medium-high. Add butter or oil.
  2. When butter foams (or oil shimmers), crack egg directly into the pan.
  3. For sunny-side up: reduce heat to medium-low, cover with a lid for 1 minute. Yolk stays runny, white sets fully.
  4. For over-easy: cook 1 minute uncovered, then flip gently for 30 seconds.
  5. Slide onto plate immediately.

Plating: Place on a flat white plate. Finish with flaky sea salt, cracked pepper, and a few fresh herb leaves. Simple. Perfect.

Setting the Sunday Morning Table

The food is ready. Now make the table worth sitting at.

  • One plate, one bowl, one cup — keep it simple. Sunday morning isn't about abundance, it's about presence.
  • A linen napkin loosely placed beside the plate — not folded, just draped.
  • Natural light — move your chair to wherever the morning sun comes in.
  • Your coffee in a glass — a double-walled glass lets you see the layers and keeps it warm longer.
